Glossary of Food Mentioned in Ep 5:
Mapo Tofu [麻婆豆腐]. In Japan, they say it as "mabo doufu". Popular Szechuan dish that consists of tofu and minced meat with a spicy sauce made from douban and douchi.
Gomi-ittai [五味一体]. The name of the shop's signature red mapo tofu, which means "unity of five tastes". "Gomi" is actually the five tastes "sweet, sour, salty, spicy, and bitter" but in this shop, it refers to "ma, la, aroma, heat, and color".
Facing Heaven Pepper [朝天椒]. Or "Chao Tian Jiao". This was written on the blackboard as one of the ingredients of "gomi-ittai", that gives it the "la" taste.
Nabefuchi [鍋ふち]. Another ingredient of "gomi-ittai" that's written on the blackboard. It's brown sugar that's formed on the edges of pots when sugarcane is boiled.
White Tea. The name of the white tea that Goro drank was Shoumei tea [寿眉白茶], mostly produced in the Fujian and Guangxi Provines of China.
Annin Tofu [杏仁豆腐]. It isn't really tofu but has a similar look, color, and feel to it. It is jellied dessert traditionally made from apricot kernel milk but almond milk is often used since it is more commercially and easily available.
