Ep. 10: "Jun (Chicken) Liver Bowl of Kameido, Koto Ward, Tokyo"

Episode Synopsis. At a time when Goro (Matsushige Yutaka) is busy, his lower back hurts once again. The doctor (Kitamura Yukiya) suggests he be hospitalized so he could make thorough examinationof his health. Goro hesitantly obliges. Three days later, Goro is in his hospital bed being served dinner by a nurse (Sudou Atsuko). Goro is looking forward to the hospital meals, which he deemed "has improved considerably lately". However, his meal this time was disappointing, and describes the flavor as "thin". Then, the doctor comes to check on his progress. He says Goro is ready to be discharged the next day. However, for no particular reason, he nonchalantly asks Goro about gyoza. As a result, Goro who is yearning to eat something salty and savory, cannot stop thinking about gyoza, and had trouble sleeping. The next day, he gets discharged and decides to reward himself with a hearty meal. He chooses a ramen shop called "Saien", which of course serves his much longed-for gyoza. His wish is granted, and along with it, he orders the shop's famous dish, Jun Liver Bowl...

Kameido. Part of the old downtown, located in Koto Ward. It is known for the location of Kameido Tenjin Shrine, where lovely wisteria flowers bloom in late April (pic above).

Kinchaku [巾着・きんちゃく]. One of the oden items in Goro's hospital meal. Kinchaku, iterally meaning "pouch", is made of "pouches" of thin deep fried tofu (aburaage). Its fillings include mochi and other ingredients, with the top tied with kanpyō (gourd shaving). Also referred to as fukuro [袋] literally meaning, "bag".

Yukiyama Sanka [雪山讃歌]. Means, "Snow Mountain Hymn". Goro made a reference to this when he saw the bowl heaped with a pile of chopped greens on top of liver. This 1927 song (listen here) was written by Nishibori Eizaburo, is sung to the tune of "Oh, My Darling, Clementine".

Jidori-bo [自撮り棒]. In case you're curious what a selfie stick is in Japanese, it's jidori-bo, literally means, "self-taking rod".

Ingredients:
Rice 200g; Chicken liver 150g; Chicken hearts, 1pc; Gizzard ½ pc; Chicken skin, small amount; Green onions, 1 pc; Sesame oil 1 TB
Jun Liver Sauce: Soy sauce 2 TB; Sugar, 1.5 TB; Shaoxing rice wine, 1 TB; Oyster sauce, 1 tsp; Grated garlic 1/4 tsp; Shichimi 1 tsp; Vinegar 1 tsp
Steps:

1) Cut the liver into 3mm width, and drain the blood by immersing in water. Cut the other parts in the same manner/size.
2) Finely-chop green onions into 1mm and immerse in water for about 15 minutes.
3) Mix all ingredients of the sauce, and adjust the taste.
4) Fry the liver, heart, and gizzard in 150 ℃ oil, for 30 seconds.
5) Strain the liver. In the wok, add sesame oil and stir-fry again the liver, for 30 seconds.
6) Add the sauce immediately and stir. Serve on top of a bowl of rice, and garnish with plenty of green onion.
